Tuna Noodle Casserole (by Bet)






You either love it or hate it and I happen to LOVE it.  My husband HATES it, but he's away so...



Kat asked me to post this recipe as I was making it while we were talking.  This is my non-scientific recipe.

Boil enough egg noodles (I used whole wheat) that it looks like it won't overload the tuna.  Put a can of tuna in a casserole dish.  We can ours fresh and I am not sure if it is the same with store bought.  Throw in some sour cream, a lttle milk and a can of cream of mushroom soup.  It should be the consistancy of tuna when you spread it on a sandwhich. Add your noodles and some peas.  Sprinkle in some salt, pepper, and seasoning salt.  Crush some potato chips for the top (make sure your children can't find the bag before hand, otherwise you will have an empty bag of chips).  Put it in a 350 degree oven until it is hot all the way through and eat.

    Anything made with your home-canned tuna must be good.
    Tuna casserole is now on my to-do list. I can't believe I've come this far in life without having tasted it.

  3. You can your own tuna??!! Okay - I must ask you my really stupid question that no one's ever been able to answer - is tuna cooked before it's canned?

    I love tuna casserole, but I've never put potato chips on top. That's a smashing idea - I'll try that next time.

  4. Truth be told, I watch the canner at the beach while my mom, sister and aunt do the hard part of canning tuna. But it is a bonding experience.

    The tuna goes into the canner raw and comes out cooked. We don't add anything but raw fish to the jars. It is a wonderful sight to behold. Plus, it doesn't have the same stench the stuff from the store has.

    My husband and son still won't eat it, though.

  6. Fresh-canned tuna sounds so good. I wish you could send me some.

    I understand about reading papers - I'm a teacher too, and it's the only part I don't particularly like.
